Cinnamon Coffee Cake

           I don’t understand how people manage to post several times a week. There must be some magic because isn’t life just too busy? It is always amazing to see those people who can study, feed families and run a blog, all at the same time.
   
        It’s like one word has been the death of me lately, ‘Assignments’. I have worked on them all the previous week and I have a feeling, this is going to happen this week too. My hand aches and cries for mercy. So dramatic. The only holiday I get throughout the week is Sunday on which I worked all day before falling into a deep sleep at 10 pm and slept straight for 8 hours which is a length of time I rarely sleep in one sitting. My right hand feels lazy. But, I like being busy, I like ticking off errands in my notepad and finally the satisfaction in sleeping early at night. And more so, going through a predictable schedule which somewhat convinces me that nothing bad is going to happen. But the fear hasn’t gone yet. 
       I thought I would write this post about general updates so it is undoubtedly going to be a huge clutter of thoughts.

            You would have noticed the changes in the blog. It was a project I had been working upon since summer and it is a big relief that finally it has been completed. I took the  template from one of those directories but there are countless changes I had to do to it. This is the original template of whom I changed the widgets and the total color scheme. I’m rather satisfied. I have always wanted a image slider and now I realize what a pain is it to change the images and the links from your template every time you need to change the featured posts. But hey, it is pretty :)
         
           I want my own domain so bad. It’s so weird that people don’t understand the importance of one. Infact they get professional designed templates but still have a subdomain. I’ll get mine the day I get my credit card which is unfortunately, a long long time to go. Till that day, I keep hoping someone offers to buy me one. Please?

               The picture above shows the ice cream practically melting while I tried to snap some good shots. I asked the helper to bring me some flowers and she brought me these multi colored ones. Well they worked in creating the atmosphere. The magic of nature?
                            As far as the cake itself goes, it was very very good. The brown sugar filling caramelized in the oven and separated the cake into two glorious layers. It is a really unique recipe. You need to make this. This was my first time baking with cinnamon and I like it. But it can also be overwhelming so I’ll decrease the amount a little bit next time. It was moist, tender, in fact one of those few desserts I have made that my mum liked too. Though, we always give most of the cake away. Nobody here eats much dessert or they’re rather picky in homemade ones. But it’s not like they’re healthy so I like moderation.

    This is a go to recipe for teatime, not something you’d try to impress guests with.


Cinnamon Coffee Cake-

Ingredients-
¾ cup butter (softened)
1/3 cup packed light brown sugar
½ cup white sugar
2 eggs
1 tbsp vegetable oil
1 ½ tsp vanilla extract
2 cups all purpose flour
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
1/3 cup buttermilk (or Yogurt)
1/3 cup milk
1/3 cup light brown sugar
¾ tsp ground cinnamon
Instructions-
1. Preheat oven to 325 degrees F.
2. Make the cinnamon sugar by whisking together 1/3 cup of the light brown sugar and the cinnamon.
3. In a large bowl, cream the butter and sugars. Add the eggs, oil and vanilla and mix until fluffy. Add the buttermilk and milk and mix well.
4. Whisk all the dry ingredients in another bowl. Mix the wet mixture and the dry mixture together.
5. Grease and flour your preferred baking pan and spread half of the batter in it.
6. Sprinkle all of the cinnamon sugar on top of the batter and spread it evenly. Spread rest of the batter on top.
7. Bake for 55-60 minutes or until a toothpick inserted in centre comes out clean. Serve warm.

  1. The cake looks very nice. I have never tried cinnamon in a dessert, so many people love it. The cake should be a good place to start!

    MashaAllah i really like the cinnamon flavour in cakes, yours looks tasty!

    the most delicious form of cinnamon for me would be in the form of cinnamon rolls/buns, i have only baked them once, the dough can be a nightmare to roll up but well worth the effort as I still remember the brown sugar/cinnamon combo was a big hit (with me) dh however, isn't a big fan of too much cinnamon :( hence why I haven't made them since.

    I am not courageous enough to try them, too hard for me. And my dough never rises :( I don't like too much of cinnamon as I wrote. Anyway I can't access your blog. What's the matter?

  6. Sanaa- Please tell me how it turns out if you try these :) Thank you xo P.s coffee is not acatually involved in the ingredients. It's called a coffee cake because it is supposed to be eaten with coffee :)

  7. I an not a coffee drinker so I my own little twist to your cake.
    It turned out beautiful. My family adored it mashaAllah. I did not use the baking powder or soda simply because I did not have any. I sprinkled a tablespoon of self raising flour in it instead I only used I tablespoon of coffee granules due to how strong coffee is itself.
